
Spiced Garlick-y Grilled Snapper
- Red Snapper, with the skin
- Garlic (lots!)
- Juice from one lemon
- Orange Juice (about 1/4 cup)
- Olive Oil
- Salt/Pepper
- Blackening spices (or any mix of spices you like :)
Mix all ingredients, spread over fish and let marinade for 20-30 mins.
Place on a the grill, with the skin side up first (to get the nice grill marks on the fish)
In 5-6 minutes, turn and cook thoroughly (about 14 minutes total, depending on thickness).
If you have a fish basket for the grill use it..if you don't have one...get one :)
Light and simple, but very yummy....definitely a repeat!
- Potatoes of your liking (I used regular good old Idaho potatoes)
- Olive Oil
- Salt/Pepper
- Parmesan Cheese
- Black truffle Salt (a little bit goes a long way!)
Preheat over to 375F
Slice potatoes in strips (as if you were making French fries!), season with salt and pepper, drizzle with olive oil and mix well.
In a non-stick cooking pan (wish I had one! haha), place the potatoes and roast for about 30 minutes. Approximately mid-way through, move them around to get an even brown color. If they are done, but you still want them a little more on the brown side (like I always do!), just broil them for a couple of minutes.
Immediately after you take them out, sprinkle a pinch of the truffle salt and top with Parmesan cheese!.
Voila, delicious!
Running update: Not anything exciting to report. Went for what I thought would be a 4 mile run...after 3.5 miles my foot was bothering me so I decided to walk the rest home. The run up until that point has not been my best, but I haven't ran since Monday and last week was lame...it's like starting from scratch! :( On another running note, my uncle just ran the NY marathon...see?? My dad, my uncle...it has to be in my genes, please? :))

Que rico........Y esta facilisimo. Me encanta la marinada del pescado y me gusto mucho lo de las papas horneadas con esa sal de trufas. Esa la compraste en el super o es de las que produce tu amiga?? Los esparragos tambien se veian Yumi Yumi.
