Banana Wheat Yogurt Muffins


I haven't done a cooking post forever!....so I figured I would add one today since I just had a yummy breakfast!

I'm a big fan of muffins and breads...but not a big fan of all the fat and bad carbs that come with them. I had saved a recipe from the back of a Stonyfield Plain Fat free yogurt container and decided to give it a try. I did modify it a bit to make it even more healthy.

These muffins use almost no fat and will come to about 150 calories per muffin (maybe less with my substitutions, see below next to each ingredient that I modified). I think next time around, I will add a little bit more yogurt. I didn't have any pecans or walnuts at home, but that would be delish!

Ingredients:

1 cup all-purpose flour
1 cup wheat flour
1/1 cup of sugar -- I used a bit less than 1/2 a cup and used brown sugar
1 1/2 teaspoons of baking soda
2 eggs, slightly beaten
1 cup of yogurt -- I used plain fat free Stonyfield organic yogurt
1/4 cup butter, melted -- I substituted this for 1 tablespoon of butter and 6 tablespoons of ground organic flax seeds.
1 teaspoon vanilla
1 cup chopped strawberries -- I used 2 ripe mashed bananas instead!

Preheat oven to 375F.

In a bowl, mix together the flour, sugar and baking soda.

In a separate bowl, mix eggs, yogurt, butter, flax seeds and vanilla.

Add mashed bananas (or chopped strawberries!) into the flour mixture and stir, then pour yogurt mixture and stir.

Spoon batter mixture into greased muffin top (makes about 12).

Bake for 20-25 minutes...and enjoy!

Easy yummy recipe...

You can never go wrong with tenderloin tips, can you?. For our anniversary dinner I decided to make up a recipe and it turned out great!.

Rosemary Port Tenderloin Tips

1 Tenderloin Tip
2-3 Shallots, minced
3-4 Rosemary Sprigs, chopped
3-4 Garlic tooth, minced
Port (about 1/2 cup)
Olive Oil
1 tsp brown sugar
S&P

Season tip with S&P and heat the olive oil in a pan until almost smoking (make sure it's hot!). Brown the meat in all sides, about 1-2 minutes on each side. Transfer to a plate and reduce the heat. Sautee the shallots with garlic and after a couple of minutes de-glaze the pan with the Port. Add the chopped rosemary, S&P to taste and a little bit of brown sugar. Let it cook for a minute or so and return the meat to the pan. The heat should now be medium low. You can cover the pan and after about 3-4 minutes flip it cover again and cook until desired doneness. We like ours medium and that was about 10-15 minutes in low/medium heat.



I served it with a simple salad with Olive oil/Balsamic dressing (arugula, watercress, tomatoes, avocados and red onion). On the side we also had garlic roasted baby potatoes....yummm!



In the interest of full disclosure, there also was a rack of lamb (mustard crusted)...my very first rack and well, maybe my last (at least with that recipe). I wasn't impressed so I'm pretending that never happened and not showing it off.

Since our anniversary feel on a Sunday, we went out Saturday night and had dinner at home Sunday...so it was a weekend long celebration ;)

Running update: Not feeling my foot is doing well lately so I haven't ran since Saturday. Just playing it by ear for now!

Updates

Hi everyone!!! As I mentioned I have been busy with all sorts of challenges...a.nd have been able to check some things off my list!


RUNNING
Was able to bring my running totals closer to my January goal with two great runs. Friday I went for a 5.5 mile run by the beach (made a mental note to do that more often since our house is 4 miles from the beach!). Saturday I took the day off and Sunday I went for a 3.6 mile run by the house right before dinner. I felt great in both runs and my foot only bothered me slightly, but nothing compared to how it was last week.

Only a few more miles this week to reach my goal...and less than a week for my first 5K!!! :)


PUSH-UPS
Guess you will be joining me in this challenge?...the hubster!!. Today we do our initial test to find out what level we are in. From there we choose our recommended 6-week program.

Note for Erpapin (aka: Dad): don't worry...I'm still doing stretching and Yoga (at least twice a week!)...I also do other strength /cardio group classes at the gym to mix it up ;)


COOKING
Last week the challenge was to use Pumpkin...as I mentioned before I made Pumpkin Oatmeal. It was delish!!!. This week's challenge is Blueberries!...I always have my morning cereal with some sort of berries...today it was a mix of Strawberries and Blueberries. Also, for snack I had Plain Yogurt with pecans and blueberries :9 ...YUM!




ORGANIZATION
You didn't think I forgot...did you?. One of my '09 resolutions is to organize one space a month every month this year. This month's space was the closet in the blue room (our guestroom). It wasn't terrible, but look at the difference!..Now the guests can actually use the closet without wondering why we have ties, shoes, fans, purses and camping equipment in there :)

In the organized space I only have the sheets and towels for that room as well as space and hangers for guests.





That is it for now!...I'm trying to choose a space for February but haven't decided on one yet.

Challenges...Bloggerized

I have to say Blogging is a great way to get motivated...or at least it works for me because I find new and different ways to get motivated everyday through all sorts of sites and blogs.


RUN 40 Miles

First of it's my own challenge. As you know, I have a goal of 40 miles per month. Well...January it's almost over and I still need to run 15 miles!!!. Just seeing the little ticker on the side motivates me to get out there and complete my own challenge. The NYC trip set me back so i will have to do some longer runs to catch up!. Next week it's the Race for the Cure!...I'm very excited to see what my time will be (this is my first 5K!), but even more excited to support this great cause and Tati's good friend, Daniela.

Yesterday Tati (my sister) called and said "Have you considered you can win this race!?"...haha, I thought that was really funny. No I have not considered it...and no, I'm not that fast!. I do appreciate her confidence ;)


100 Push-ups

Then I found a really cool challenge that I plan on starting...



Basically it's a progressive program that will help you build up to doing 100 push ups!. I plan on starting this next week. It starts with an initial test and depending on your level, you follow one of the plans suggested on the website. Why Push-ups? Push ups are an awesome exercise not only for your back, chest..but it also helps to strenghten your core...which is a key for good form when running.


Cooking

In 2009 I want to expand my comfort zone in grocery shopping, specially when it comes to fresh produce. I love cooking but I always find myself eating some of the same things over and over. We have a fairly healthy diet and eat mostly fresh stuff (so most of my grocery shopping is done in the outer aisles of the supermarket). What I want to do is add more color and try new things.

So far I've done a good job at this with simple things: adding sweet potatoes sometimes to roasted potatoes, adding peppers or radishes to the salad, trying (and loving..at least me -and not the hubster- loving!) Brussels sprouts, adding spinach to a tomato based sauce (you will see this in the Inauguration pasta dish I made!), etc.

I found a cute new blog The Chic Life and she has set-up a weekly food challenge. Basically every week she will choose an ingredient that most people don't typically use and you have to use it that week (either by eating it by itself or by trying a new recipe). This week's challenge (which I guess I only have a day to complete!) is Pumpkin and Pumpkin Seeds!. For the longest time I've been dying to try Kath's Pumpkin Oatmeal so that will be my recipe. I plan on making it tomorrow so Alejandro can also try it!. I think it's a great way to change oatmeal and add an additional flavor. I will be using canned pumpkin. Although I try to limit the use of canned stuff, I will use it for the try out.

The ingredients being selected for the challenge, will include items from this article 11 Best Food you aren't eating from the NY Times. Here is what the Chic Life author posted about Pumpkins:
"Pumpkin - According to Parker-Pope, this ingredient is, "A low-calorie vegetable that is high in fiber and immune-stimulating vitamin A; fills you up on very few calories. How to eat: Mix with a little butter, cinnamon and nutmeg." According to Ellie Krieger, in her book The Food You Crave, "1 cup (of canned pumpkin) contains more potassium than a medium banana and more vitamin A than a cup of carrots."


Positivo

Another great way to get motivated is to see what others do to enhance their lives. My friend Nani has created Positivo. Here is what she had to say:

There are so many great challenges out there...from getting organized to reading more books. Don't beat yourself up if you end up picking up way too many challenges that you can't really complete them all. Pick a few themes and have fun with it!! At the end of the week relax, have a glass (or glasses, in my case) of wine, smile and know there is always next week!

Happy December!

I can't believe December is here already!!!. By this time last year I was busy busy with wedding planning, fittings, etc...wow, time flies!

Thanksgiving was a big hit. Alejandro thought the Turkey was the best one we've made so far and the gravy was top notch. I owe it all to Mr. Scanonne!! :) My sister's apple crisp pie was delishhhh and my pumpkin pie didn't disappoint!.
Thursday running update: Nah, I was sore from my 3 days straight of running (M-W)....in all of which I ran in the 9s min/mile pace!!!






Friday, as promised, we had a lazy but fun day. We started with brunch (pumpkin pancakes -with the help of a little one!-, chilaquiles -my sis' made- and fruit salad). Then while the sis' and I cleaned, the rest went to get the Christmas tree!....a beautiful and perfect Christmas tree!. We decorated, did some crafts and relaxed.
Friday running update: Didn't I say it was a lazy day?...no running!



Saturday we headed down to Miami for a wedding. It was a good time and the hotel was beautiful!!!.
Saturday running update: Went out for a 3.32 mile run, it was awesome...great weather, good pace!. After the run I joined Alejandro at the gym for some toning and then it was time to get ready for the wedding!



Sunday we drove back..and let's just say I wasn't feeling my best...so no running :(

That brings me to December. I started the week at the Doctor!...but in a good way because I was headed for the third Alcohol Shot for the Neuroma!. I was excited because I can already (with only two shots) feel the results!!! My foot doesn't go numb when I go pass the 3 miles anymore!....woohoo!. The Dr. still recommends I get all seven shots, but I'm not sure I need to get all of those...so off to Google later today to find out what other people have done.

So no running yesterday due to the shot (my foot actually got pretty swollen this time around!), I will try going to the Pump class today and tomorrow it is....BOOT CAMP!!!. I am so excited!! I don' think I'll enjoy the morning workout thing, but if the class is good it will be all worth it!.

Since I couldn't run yesterday, I took time to use leftovers from Thursday!! Made Turkey Veggie Soup and Pumpkin Honey Wheat muffins.

New week!

And hopefully this week I will be a better blogger!...bad, bad, bad...It's just been crazy lately. Why you ask?...WORK and FUN!. Last week was an interesting week, here is a quick recap:

Monday I left to go to on a business trip...bright and early, so bright and early that I got confused and thought my flight was at 5am rather than 7am. So at 2:30AM (after a failed attempt to sleep) I was in my car driving to the gas station when I decided to check my blackberry for the flight details....Surprise, surprise...my flight didn't leave until 7am. needless to say, I drove right back home but at that point I was completely unable to fall sleep....so I basically pulled an all nighter :/

Yep, I'm an idiot (I hate calling myself that, but seriously!!?) and if you need yet another reason to believe it...I had bought a book to read after Marley and Me...turns out I had already read it (not even that long ago!!)...*sigh*

Tuesday was a long day at the office and Wednesday I was on my way back home!. Why you ask? (ok, you didn't ask but I'm still going to tell you...) it was the husband's birthday!!!. By the time I made it home it was already 6pm...that didn't stop me from giving him a Tapas Dinner (one of his favorites!). Dinner consisted of: Spanish cheeses, Jamon Serrano, Olives, Spanish Tuna Empanada (Empanada gallega), Garlic Shrimp (Camarones al Ajillo) and of course nice toasty bread!. For dessert we indulged in a delicious Birthday Carrot Cake...not like any cake though...this was a RAW carrot cake!. His mom made it and it was different, light, healthy and delicious!!!. We finished off the night welcoming our friends that came to stay with us through the week :)

We had a great time with them and got to celebrate Alejandro's birthday the whole weekend :)

Running Update:
Because of the terrible flight schedules, I couldn't run much. I still managed to run 2 days, which is not bad considering Monday-Wednesday was not an option. Last night was the best run I've had in a long time. The weather was AMAZING and if it wasn't because my foot started bothering me, I would have gone a little longer! (did 3.5 miles).

Today I got my Alcohol Shot (second round)...right now my foot is swollen and I need to stay off of it for two days. I am so looking forward to getting Round 3 in two weeks because supposedly that is when you start seeing improvements!. Until then, I will stick with doing 3-4 miles at least three times a week.

So there you have it folks!...(yeah, by folks I mean Dad who has been calling me asking me why my blog has been neglected! ;))

This weekend I'm off to Orlando for a short girl's trip. I am so excited!!! Road trip!!!!!!!

Spiced Garlick-y Grilled Snapper with Parmesan Truffle Oven Fries

Especial para Isa!!

Spiced Garlick-y Grilled Snapper

  • Red Snapper, with the skin
  • Garlic (lots!)
  • Juice from one lemon
  • Orange Juice (about 1/4 cup)
  • Olive Oil
  • Salt/Pepper
  • Blackening spices (or any mix of spices you like :)

Mix all ingredients, spread over fish and let marinade for 20-30 mins.
Place on a the grill, with the skin side up first (to get the nice grill marks on the fish)
In 5-6 minutes, turn and cook thoroughly (about 14 minutes total, depending on thickness).

If you have a fish basket for the grill use it..if you don't have one...get one :)

Light and simple, but very yummy....definitely a repeat!


Parmesan Truffle Oven Fries

  • Potatoes of your liking (I used regular good old Idaho potatoes)
  • Olive Oil
  • Salt/Pepper
  • Parmesan Cheese
  • Black truffle Salt (a little bit goes a long way!)

Preheat over to 375F

Slice potatoes in strips (as if you were making French fries!), season with salt and pepper, drizzle with olive oil and mix well.

In a non-stick cooking pan (wish I had one! haha), place the potatoes and roast for about 30 minutes. Approximately mid-way through, move them around to get an even brown color. If they are done, but you still want them a little more on the brown side (like I always do!), just broil them for a couple of minutes.

Immediately after you take them out, sprinkle a pinch of the truffle salt and top with Parmesan cheese!.

Voila, delicious!

Running update: Not anything exciting to report. Went for what I thought would be a 4 mile run...after 3.5 miles my foot was bothering me so I decided to walk the rest home. The run up until that point has not been my best, but I haven't ran since Monday and last week was lame...it's like starting from scratch! :( On another running note, my uncle just ran the NY marathon...see?? My dad, my uncle...it has to be in my genes, please? :))

I did it!!!...Livestrong and Morton who??

Woooo-hoooooooooooo. I did it! I completed my first unofficial 10K!. Today I ran 6.23 miles in 1:03'43'' (10'13'' / mile). I gotta say, it wasn't the easiest run I ever did...even at the beginning it was a little tough. It was muggy out and I had a pounding headache. I was excited to get out there anyway so I took two Advil and took off!.

Wait a second....did I just say I was excited to get out there? What in the world is wrong with me!!!?. I'm never excited about working out. Yes, I know I have to do it...for health reasons and all that good stuff, but I don't actually get excited about it. So yeah, something is not normal, but I'll take it while it lasts!...or maybe I do have the marathoner genes in me after all!!


And there it is, my Nikeplus summary. It almost looks like a downward trend, but in reality I think I started to fast and then settled at a more comfortable pace. So there you have it kids, my longest distance to date...and I don't want to brag or anything, but Lance Armstrong decided to make an appearance at the summary to congratulate me. Yeah baby, Livestrong!

This was the first time I ran while listening to an audiobook (see post below). I think the book helped!. I thought maybe it would slow me down, but it really didn't...if anything it kept me from thinking about the actual distance I wanted to run. Once in a while I would drift away thinking about the run and what not, but would quickly get right into the book. So overall, I do recommend it. Specially for longer runs (this was long for me!) and specially if you have other things that may affect your run (like the thought of the awful headache!). The book, Nineteen Minutes, so far it's pretty good. It started to pick up right when my run was ending and if my foot wasn't bothering me so much I may have kept going just to see what was going to happen next!.

Now on to the not so great news. Looks like I have a Morton's Neuroma. This is not the first time I get this pain..it's just the first time I thought to ask and the first time I realize I need to go see a Podiatrist!. I get this pain on my right foot, like numbness and it feels like there is a sock all bunched up under my toes (that is exactly how I described it to Alejandro during dinner). Afterwards, I decided to go over to the Nest and ask the Nesties about it...sure enough, they knew exactly what it was...a Morton's Neuroma

Now thinking back I think I may have had some discomfort ever since I broke a toe in College. I get this numbness feeling every time we go hiking (I always thought my sucks were getting all bunched up!)..and I have felt it every time I run longer distances. I won't be able to see a Dr next week because I'm out of town, but it's my first priority when I get back!. For now, I iced it for 20 minutes and will be going to the running store tomorrow to ask some questions.

After the run I got home so excited to share, but had a less than happy husband due to a tough day at work (very very very crappy market). I needed to go get some food for dinner and decided we both needed a rewarding and nice meal (and quick!) so I went for a good, hearty and delicious menu: Grilled Filet Mignon, Baked Potatoes and Summer Salad. And of course, some vino!

Alejandro takes the award for the best griller...no doubt. The steaks were amazing! (he just adds rock salt and Worcestershire sauce and then works his magic on the grill!). I quickly got some baked potatoes, due to time constraints precooked them in the microwave and then popped them in the oven at 450F to get that yummy crust that I love!.

Summer Salad in Fall??...we live in Florida, so yes, it is still Summer here!.

Summer Salad
Organic Baby Romaine
Organic Baby Arugula
Campari or Grape Tomatoes
Strawberries
Red Onion
Goat Cheese
Dried Cranberries
Sliced Almonds...although I didn't have any this time around :((

Toss the ingredients in a bowl with S/P and balsamic vinegar and Olive Oil...that is all it needs!. Voila!

So there it is...sorry it got a little long, I guess I had a lot to share ;)

I love Saturdays! (plus some recipes :))

Saturday has to be my favorite day..I love, love, love Saturdays!

Today is also the day of my last run for the week, so I will give an update on Running/Week 3 tomorrow!

Last night the husband and I decided to stay in, make dinner and enjoy some wine. The night turned out to be awesome because we basically chatted the night away. If you know Alejandro, you know this is not normal as he is not the "chatting" type. Yes, we talk, but chatting the night away is not usually the norm..lol. It was great, I love chatting so I was going to complain!...after a while I started switching into a more comfy (horizontal) position and got a hold of the blanket. Not sure when exactly, but the inevitable happened. I felt sleep. When I woke up, is was almost 2 am and quickly moved to bed (the boys stayed watching tv a little longer).

Update: Alejandro woke up and told me last night I actually announced I was going to sleep. He asked me why I didn't move to the bed and I said I just couldn't! haha

We had a great dinner and I snapped some quick pictures (while Alejandro laughed because he knew they were for "the blog")....but hey, I've got an audience here and they like yummy healthy recipes!...I just do it for the people. LOL ;)


Marinara Mussels

I love having Mussels for appetizer. Really, I like any appetizer, but Mussels in particular are great. You serve them in a big bowl (or directly from the cooking pan like I did) and everyone jumps in. I think it's a "social" appetizer, great for small groups (2-4 people). Not sure I want to be sharing a big bowl of mussels with 10 other people!.

Ingredients (2 people)
Mussels (I usually count about 6 per person. Make sure you keep them in the fridge until you are ready to cook them. Wash them well to get rid of any sand they mat have. Discard any Mussels that don't open when cooked)
Pured canned plumed tomatoes (I had left over from the Chicken Cacciatore)
1/2 Yellow Onion, Diced
4 Garlic Teeth, Minced
Fresh Basil (which reminds me I should replant a new Basil plant!)
A pinch of Dry Oregano, Basil and Tarragon (or whatever Italian Herbs your heart desires!)
Salt and Pepper to taste
Balsamic Vinegar, about 2 tablespoons
Sugar, about 1 teaspoon

  • In a deep pan at medium heat, saute the Onions in a little Olive Oil, for about 5-7 minutes, season with dry herbs and add salt/pepper. Add the Garlic and continue to Saute for a couple more minutes.
  • Add the Tomatoes, Balsamic, Sugar and season to adjust salt and pepper if necessary. Reduce the heat, cover and simmer for about 10 minutes.
  • After 10 minutes, add some water (for mussels you want the sauce to be on the more thin side). Add the Mussels, the fresh chopped basil, stir and cover back up. Once they open, stir them again (to make sure the sauce gets in there and just cook them a little bit longer (about 1-2 minutes).
Serve! This would have been awesome with some bread to dip in afterwards!

Roasted Fingerling Potato Medley

(name provided by the husband!)

Fingerling potatoes are supposed to be the healthiest kind of potatoes (don't recall the actual reason, but Alejandro read that on his Men's Health Magazine). I love them because you can get a bag with a great little variety. Some are yellow, red and some are purple (my favorite ones!).

I also love roasting potatoes because it is easy and non-messy :) Usually I just roast the seasoned potatoes, but last night I decided to add a little twist.

What you'll need:

Fingerling potatoes, diced small
Half yellow onion, half a red onion, quartered
A lot of Garlic teeth (with the skin..this makes a delicious little paste you can then squeeze on to the potatoes!).
Red Pepper, sliced (I just happened to have some)
Salt/Pepper
Any dry herb you like, I used Oregano

Olive Oil, just enough to cover the potatoes lightly

Preheat oven to 375F. Combine all ingredients in a roasting pan and mix well. Roast for about 30 minutes, and then raise temperature to 425F (to get those yummy golden colors) for another 15 minutes or until it looks done!...





Roasted Acorn Squash

Since I had the oven going, I decided to also roast an acorn squash. I love all things Fall...and Squash can be really delicious as a side!.

I cut big slices of the squash and seasoned with olive oil, salt/pepper, nutmeg, cinnamon and honey. Make sure you coat all sides and keep an eye on it while in the oven. I kept adding a little water to the roasting pan to form a bit of a sauce. They were in the oven almost as long as the potatoes (I took them out a few minutes before.

A few minutes before taking them out, I added a few dried cranberries....YUM! :9

Chicken Cacciatore (a la Andreina)

Like I said, I don't follow recipes and quite honestly I don't even know if this is the "proper name" for this dish (so I apologize in advance to anyone that actually knows how to make Chicken Cacciatore!). But, it has tomatoes, it has some veggies and olives...sounds like Cacciatore to me!

I usually try to utilize whatever veggies I have on the fridge when cooking. This is the first time I make this and my fridge happened to have these ingredients, so next time I probably won't use the exact same thing...but the "essence" will remain the same (ie: tomatoes, onions and garlic!).

I also would like to apologize in advance for all the unnecessary comments next to the ingredients. I have tried to type up a recipe without the comments, but I just can't do it!


Chicken Cacciatore

Organic Chicken -- (I used breasts, but this would probably be really yummy with chicken thighs..or both!)

1 Large yellow Onion

2 Celery Sticks -- (just because I had some)

Garlic -- (I used like 4 teeth)

1 - 8oz package of mushrooms -- (I loove mushrooms :))

1 can of peeled Italian tomatoes with Basil -- (I like the "Cento" Brand, which only comes in the big can...I used about half)

White wine -- (Don't use cooking wine!! I usually buy a $6 bottle of white wine or so and leave it in the fridge for cooking....I used about 1/2 cup on this dish, maybe a little more)

2 Rosemary Sprigs -- (I just go to my backyard and grab some..it is the easiest herb to grow and yummm, so tasty!)

Spanish Olives

Capers

Dry Oregano and Dry Basil to taste

Salt and Pepper (and sugar) to taste


Season Chicken with Salt/Pepper (or Toro/Torero!) and with some Oregano. On a Ducth Oven (or big pot!), heat some olive oil at Medium/High Heat and brown the chicken on both sides (about 3-4 minutes per side). Remove Chicken.

Reduce heat to Medium and sautee Celery, onions (sliced to 1/8ths) and Rosemary Sprigs for about 5-10 minutes. Season w/ S&P.

Add Mushrooms and Garlic and continue to sautee.
Optional: At this point you can also add some flour if you like your sauce to be a little thicker (I added less than 1/2 teaspoon of flour...just a little bit goes a long way!).


Add Wine to deglaze and scrape the brown bits at the end of the pan.

Add Tomatoes (I used about half of a big Cento can and blended the tomatoes quickly with a hand blender before adding them.

Season with S/P, a little bit of sugar, herbs (I used Basil and oregano)

Add olives, capers and chicken.

Lower heat to low and simmer for about 30 minutes.

Enjoy!...Alejandro had this over brown rice and he quite enjoyed it. I enjoyed watching him eat while I drank my protein shake :/
